Once the alcoholic fermentation is finished, the most prestigious red wines are introduced into French oak barriques, where they remain for about 12 months and complete the malolactic fermentation.
Barriques and casks are kept in the barrique cellar dug into the natural rocks in respect of architectural choices that recall the past, thanks to the insertion of barrel vaults and cross vaults of great visual impact, made of terracotta and travertine.
